Nestled between the hills of Nepal and Sikkim is the region of Terai situated in the foot hills of Darjeeling, known for its lush green forests and shade trees. Before the dramatic development all over India, this region used to be one of the most prestine regions where wild animals like tigers, rhinoceros and elephants can be found roaming fearlessly. Alas, the region is now developing faster than ever.
Under these circumstances, Malnady estate has become a green haven. This estate produces Only Green tea, much of which is exported to Pakistan, Afghanistan and sent to Kashmir for use in Kahva tea.
If you have never tried Terai green tea, give this tea a try. It is very mellow with narry a hint of bitterness.
Oh, one last thing, this tea is managed by Mr. Ghansham Tiwari, our uncle from my husbands side of the family. So, there is a "family connection" here too!
Brewing instructions:
Bring the water to a boil and let it stand for a couple minutes. Add 1 tea spoon (~5 gms) of tea and let it steep for about 1.5 minutes. The tea settles to the bottom. Mix using a spoon and strain it into a cup. Reuse the tea at least one more time, this time increasing the steep time to 3 minutes.
